The dog days of summer are here!

This is my favourite time of year,next to winter in Florida http://www.visitflorida.com/

Its hot as hell at night in the SHAWA......so to cool off everybody heads down to

I was watching the unloading of a large lake freighter and it made me reminisce.

Cranes,stevedores,FAS,FOB,cargo,dry goods and olde units of measurements. Like pints and yards and chains and Hogsheads! There was a time when a man could go down to the harbour and haul home a hogshead of Molasses and a bushel of chickens to make some..............................

MOLASSEFIED CHICKEN


Things U Need

3-5 pound chicken

Carton of Molasses

Box of coarse salt

1 Handful freshly chopped dried chilies (Don't be a wimp-get out the rubber gloves and cutting board)

Water

Fresh ground pepper

Big-ass Ziploc bag

Chicken stand

1 Add carton of molasses to large metal bowl.

2 Add 1.5 cups of salt to molasses

3 Add at least 3 liters of cold water

4 Add chilies

5 Stir that shit up my FRIEND! If you cant get the salt to dissolve- Don't worry!

6 Get one of them there Z-loc's at the ready,uummmhhmm.

7 Stick your bird in a Z-loc bag.............



8. Carefully pour mix into the Z-loc.Add extra water if needed to COVER chicken.


9. Squeeze out the air and seal the Z-loc.REFRIGERATE at least 24hours


10. Burn a stick and drink a Ting http://www.jamaicadrinks.com/product_ting_advertisement.htm


11. Remove from fridge and open bag in the sink.


12. Place bird on paper towel

13. Bam!! Bird with fresh ground pepper


14. More chilies Y'all!!!!!!!

15. Jam chicken onto stand


16. Pre-heat oven to 350. Nice and hot now!

17. Oven time!

18. Take 'er out when it looks like this(1.5 hours)

19. Admire your work. Dont forget to PROBE YOUR MEAT, 165 is the safe-zone.

20 Now that's a bird

21 Serve with rice+beans,asparagus and bean 'n carrot medley.
